Potato Cheese Soup 2 pounds potatoes, peeled and cubed 1 small onion, chopped 2 cups water 1 tsp salt 6 cups milk 6 Tbsp butter or margarine, melted 4 Tbsp flour 1/4 tsp white pepper 2 Tbsp fresh parsley, finely chopped 8 oz Swiss cheese, grated Place potatoes, onion, salt, and water in large pot. Simmer until potatoes are soft. Mix butter, flour and pepper in a small bowl. Mash potatoes to consistency desired (I use my immersion blender, and puree it). Add milk and flour mixture. Stir over medium heat until think and bubbly. Stir in parsley. Stir in grated cheese, turn off heat, and stir until cheese is melted.
